Ingredients:

Turano Gourmet buns or Gourmet Wheat buns
4 -6oz. Skinless boneless chicken breasts
1 cup shredded lettuce
1-diced tomato
4 Jack cheese slices or cheddar cheese
*Ancho/Chipotle Mayonnaise
1 small can Chipotle peppers in sauce (1 pepper and sauce)
1 Ancho pepper soaked and chopped
1/2 cup mayonnaise
1/2 tsp. Ground Cumin

Grilled Ancho/Chipotle Chicken

Directions:

1. Remove 1 pepper with 1 1tsp. Sauce, chop pepper place in bowl with sauce chop Ancho and add to sauce with the remaining mayonnaise and cumin.
2. Mix well.
3. Can be made a day ahead.
4. Brush chicken breast with sauce from Chipotle, sprinkle with a little cumin.
5. Grill or sauté chicken until juices run clear, 3 to 4 minutes per side.
6. Meanwhile toast or grill bun, spread with Chipotle mayo, place slice of cheese On inside bottom of bun, top with chicken breast, shredded lettuce and tomato.
